Thanks to Lynda, yet once again, here are two yummy looking pumpkin recipes! 
Don't miss this weeks meeting!  SERIOUSLY!!!  This is THE meeting that speaks to me and most everyone!  We are going to be dealing with the ever present EMOTIONAL EATING!!!  So what are you REALLY hungry for?  Come in and learn some great ways to get what you are really looking for, what will really feed your soul!

HG's Vanilla Crème Pumpkin Cheesecake
HG's Vanilla Crème Pumpkin Cheesecake

The Great Pumpkin!
We're year-round pumpkin freaks, but fall is when all the "normal" people celebrate the fat orange squash. Check out this recipe. It's SO great!

HG Heads Up! You'll need a springform pie pan for this recipe. You can usually find 'em cheapie-cheap at any supermarket, or click here to order one online.

Ingredients:

For Crust
2 cups Fiber One bran cereal (original), ground to a breadcrumb-like consistency in a blender or food processor
1/4 cup light whipped butter or light buttery spread (like Smart Balance Light or Brummel & Brown), melted & mixed with 2 tbsp. water
3 tbsp. Splenda No Calorie Sweetener (granulated)
1 tsp. cinnamon

For Filling
32 oz. fat-free cream cheese, room temperature
1 cup fat-free liquid egg substitute (like Egg Beaters Original)
1 cup canned pure pumpkin
1 cup Splenda No Calorie Sweetener (granulated)
1/4 cup light brown sugar (not packed)
1 tsp. vanilla extract
1 tsp. pumpkin pie spice

For Topping
3/4 cup fat-free sour cream
1/4 cup Splenda No Calorie Sweetener (granulated)
1/2 tsp. vanilla extract

Directions:
Preheat oven to 325 degrees.

Combine all crust ingredients and mix thoroughly. Spray a springform pie pan (about 9" wide) lightly with nonstick spray -- make sure to get the sides as well as the bottom. Then evenly distribute c rumb mixture, using your hands or a flat utensil to firmly press and form the crust along the bottom of the pan. Set aside.

In a large bowl, combine all filling ingredients. Using an electric mixer set to medium speed, mix until completely blended and lump-free. Pour mixture into the pan.

Bake in the oven for approximately 1 hour and 20 minutes, until set. Allow pie to chill in the fridge for at least 3 - 4 hours (overnight is best).

Once pie has chilled, carefully release and remove springform top. In a small bowl, mix all topping ingredients together until thoroughly blended. Spread topping evenly over the pie.

Return pie to the fridge until ready to serve. Cut pie into 12 slices.

Cheesecake is dangerous territory, no matter what. And sadly (SO sadly!), adding pumpkin to it does NOT make it guilt-free. (We learned that lesson from YOU, carrot cake!) It really is hard to resist a delicious dessert when it's only available for a limited time, especially when it's as tempting as pumpkin cheesecake. Have you noticed it's been popping up on menus at places like Olive Garden and The Cheesecake Factory? Be strong, people. Resist the urge to dive headfirst into a slab of the stuff. The average not-so-large slice manages to cram in around 431 calories and 26g fat (and a WHOLE lot of sugar!). That's the same amount of fat as EIGHT SLICES of our cheesecake! One more Souper Soup!!!

One more for the road!!! Please keep sending them!! :) YUMMY!!!

Curry Pumpkin Soup
Keri Glazier
Cook Time: 25 minutes
Ingredients:
1 tbsp olive oil
1 small yellow onion, finely chopped
2 garlic cloves, minced
1 tbsp curry powder
1 tsp cumin
3 cups fat-free, low sodium chicken or vegetable broth
1 15-ounce can pumpkin
1 12-ounce can evaporated fat-free milk
Freshly ground Black pepper to taste
Preparation:
Heat oil in a large saucepan over a medium heat. Add onion
and garlic and cook until softened. Stir in curry powder
and cumin and cook for 1 minute. Add chicken broth and
pumpkin. Reduce heat to low and simmer for 20 minutes. Add
evaporated fat-free milk and cook for 2 minutes.
Transfer soup to a blender and blend until smooth.

Serves 6. 2 POINTS per serving

Per Serving: Calories 112, Calories from Fat 25, Total Fat
2.7g (sat 0.5g), Cholesterol 2mg, Sodium 101mg,
Carbohydrate 15.6g, Fiber 2.9g, Protein 6.1g

Souper Soups!

Here are 3 soups to get ya'll started! Enjoy!!! Thanks to Merry Lynn & Raquel!

Slow cooker Chicken Tortilla Soup
Raquel Painter
1 lb shredded, cooked chicken

1 (15 oz) can Crushed tomatoes
1 (10 oz) can red enchilada sauce
1 medium onion
1 (4 ounce) can chopped green chili peppers
2 cloves garlic (minced)
2 cups Water
1 (14.5 oz) can chicken broth
1 teaspoon cumin
1 teaspoon chili powder
1 teaspoon salt
1/4 teaspoon black pepper
1 bay leaf
1 (10 oz) package frozen corn
1 tablespoon chopped cilantro

Place chicken, tomatoes, enchilada sauce, onion, green chilis, and garlic into a slow cooker. Pour in water and chicken broth, and season with cumin, chili powder, salt, pepper, and bay leaf. Stir in corn and cilantro. Cover, and cook on low setting for 6 to 8 hours or on High setting for 3 to 4 hours. This whole thing has 23 points.
Top with sour cream, cheese, and baked tortilla chips. You will need to add points for how much sour cream, Cheese and tortilla chips you use.

Quick Homemade Tomato Soup

(serves 6) MerryLynn Lifferth

2 Tbsp. Butter

2 Tbsp. Olive or Vegetable Oil

1 medium Onion, chopped

1 stalk Celery, diced

1 medium Carrot, trimmed & diced

1 lb. Can Crushed or Mex. Tomatoes

2 (13 1/2 oz.) cans Chicken Broth

1 Tbsp. Chopped Basil

1 Tbsp. Parsley leaves

Salt & Pepper to taste

Melt Butter and oil in a 2 quart saucepan. Add onion, celery and carrot. Cook over low heat 10 minutes or until vegetables are soft. Add tomatoes and broth. Bring to boiling. Reduce heat, simmer, partially covered, 30 minutes. Stir in remaining ingredients. Serves 6. 2 Points per serving. (If you omit the oil and butter, it would have Zero POINTS) From Grandmother Byers


Pearl Barley, Potatoes & Beef

Ingredients
  • 1 pound(s) uncooked barley
  • 1 pound(s) 95% lean/5% fat raw ground beef
  • 6 large whole uncooked white potato
  • 4 cup(s) reduced fat bottled spaghetti sauce
  • 12 cup(s) water
  • 4 serving(s) chicken bullion cubes, knorr - Food I created

Instructions

Cook in large crock pot on high for 6 hours. These are 1 C servings


Autumn Chowder
4 lg potatoes
4 strips bacon, sliced, cooked to a crisp and grease drained and bacon blotted
1 bunch scallions, thinly sliced
6 garlic cloves, pressed
2- 14 oz chicken broth
1 t salt
1/8 t cayenne
1 c fat free half and half
1/4 C chopped fresh parsley
1 C frozen corn
Cook bacon to a crisp, drain grease and blot dry. Cook the potatoes in broth till tender. Add remaining ingredients, except the half and half & parsley. Simmer 5 min. REmove from heat and add the half and half and fresh parsley. 4 points per serving, 6 servings, servings size 1.5 Cups.

Learn from the Past!

Hello!
I don't think there is anything that beats this beautiful fall weather! My friend Kim and I found a wonderful trail that took us on the most beautiful adventure. Take advantage of these great temperatures and get out there. Maybe go for a walk or a bike ride. Who knows where you'll end up :)
This week in meeting we are going to be looking a ways that our past experiences can help up attain our current weight loss goals. We have all had successes and mistakes in our past that can help us succeed RIGHT NOW! Please come in this week and learn how our past flubs are not failure- just feedback!
Be sure to stop by a fruit stand and take advantage of all of the wonderful peaches and apples. WOW are they good. My favorite peaches right now are the Diamond Princess. They are WONDERFUL!!!

Peach Cobbler

Level of Difficulty: Easy
Take advantage of sweet summer peaches with our delicious cobbler. It's even more flavorful when made with white-variety peaches.

Ingredients

  • 6 medium peach(es), peeled, pitted and sliced
  • 6 1/3 Tbsp sugar, divided
  • 1 Tbsp cornstarch
  • 1 tsp fresh lemon juice
  • 1/2 tsp ground cinnamon
  • 1 cup all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp table salt
  • 3 Tbsp reduced-calorie margarine
  • 1/2 cup fat-free skim milk

Instructions

  • Preheat oven to 375ºF.

  • In a large saucepan, combine peaches, 1/3 cup of sugar (5 1/3 tablespoons), cornstarch, lemon juice and cinnamon; toss to coat peaches. Set pan over medium heat and bring to a boil; cook until mixture thickens, about 1 minute. Remove pan from heat; transfer mixture to an 8-inch square baking pan.

  • To make topping, combine flour, remaining tablespoon of sugar, baking powder and salt in a large bowl. Work in margarine with a fork until mixture resembles coarse crumbs. Add milk; stir until flour mixture is evenly moistened.

  • Drop 8 tablespoons of topping mixture over peach mixture. Bake until topping is golden brown and filling is bubbly, about 20 to 25 minutes. Cut into 8 pieces and serve.

Notes

  • You can enhance the peach flavor of this recipe by swapping 1 teaspoon of almond extract for the lemon juice. And stir 2 tablespoons of sliced almonds into the topping, if desired (does not affect POINTS value).

Let's Dance!!!

Roasted Vegetable Lasagna

Servings-6
Ingredients
3 medium raw eggplant, cut into 1/2-inch pieces
3 medium sweet red pepper(s), chopped
4 small tomato(es), plum, seeded and chopped
4 medium garlic clove(s), peeled and chopped
2 tsp olive oil
1 tsp table salt, or more to taste
1/4 tsp black pepper, or more to taste
9 serving dry lasagna noodles, 9 noodles, cooked and drained
1/4 cup grated Parmesan cheese
3/4 cup part-skim mozzarella cheese, shredded

Instructions

  • Preheat oven to 425°F.
  • In roasting pan, combine vegetables and garlic with olive oil. Bake until vegetables are tender, stirring occasionally, about 20 to 25 minutes.
  • Place half of vegetables, salt and pepper, and 1/2 cup water in food processor and process until smooth.
  • Spoon 1/2 cup of vegetable purée into bottom of a 9 X 13-inch baking dish.
  • Place three noodles over purée. Top with 1/2 cup of purée, 1/2 of remaining vegetables, 2 tablespoons of Parmesan cheese and 1/4 cup of mozzarella cheese. Repeat layers and then top with remaining 3 noodles, purée and cheese.
  • Bake until bubbly, about 40 to 45 minutes. Slice into 6 pieces and serve.
Mama Mia Vegetable Pie
Points- 3
Servings- 6
Ingredients
  • 1 tsp olive oil
  • 1 medium bell pepper(s), chopped
  • 1 small onion(s), chopped
  • 3 medium portobello mushroom(s), (equivalent to 1/2 cup) chopped
  • 12 oz canned tomato sauce
  • 6 oz firm tofu, drained and crumbled
  • 1 sprays cooking spray
  • 2 cup cooked spaghetti
  • 3/4 cup part-skim mozzarella cheese, shredded

Instructions

  • Preheat oven to 375ºF.
  • Heat oil in nonstick skillet over medium-high heat. Add pepper, onion and mushroom; sauté until vegetables are tender, about 5 minutes. Stir in tomato sauce and tofu (be sure to thoroughly drain the tofu before crumbling it up and adding it to the sauce). Bring to a boil. Reduce heat and simmer mixture, uncovered, for 10 minutes.
  • Meanwhile, coat a 9-inch-deep pie plate with cooking spray. Arrange spaghetti in bottom and up sides of pie plate. Pour tofu mixture over spaghetti; sprinkle with cheese.
  • Bake for 20 minutes. Let stand 5 minutes before slicing into 6 pieces.

Hola!!!

I had to say "Hola" because my good friend, Kim, made the best salsa yesterday. If you are looking for a fun new flavor, try roasting your tomatoes, peppers, garlic and onions on the grill before you make it. WOW it was unbelievable! We have been making the same salsa for years and this new twist made a huge difference. She also substituted lime juice for the vinegar and Holy Smokes! So, there is your recipe/tip for the week! Don't forget that salsa makes the best 0 POINT salad dressing!

Zero Isn't Zero???

Hello Weight Watchers!

Lose for Good

Hello my Dear Friends!
I just realized that I skipped last week. I guess with school getting back in session, I have lost a bit of time :)
I hope you have been able to embrace the last two meeting topics. Learning how to set small goals, stepping stones if you will, make every journey much more enjoyable and attainable. Making interim goals keeps success very close and much more motivating. You are never far away from the next success!
Last week we talked about the "zones" we find ourselves in. Have you learned to live in the Comfort Zone, not too full or too hungry? Have you learned to spend less time in the sedentary zone, and get out and enjoy this beautiful weather? Take some time to read pages 52-59 of your week one Eating Wisely booklet and really learn more about living in the Comfort Zone!
Now this week we are introducing a wonderful new program to Weight Watchers that will not only help you to "Lose for Good," but this campaign will help the weight we lose, help others for good! This is really exciting and very timely! Come and join us in a great movement to help yourself and others all over the world!!
Roasted Green Beans and Fresh Tomato

Sometimes simple is best. Just a few fresh herbs are all you need to accentuate the natural flavors of sweet tomatoes and roasted green beans.

Ingredients

  • 3 sprays olive oil cooking spray
  • 4 cup green snap beans, trimmed
  • 2 cup grape tomatoes, or cherry tomatoes, cut in half (or quartered, if large)
  • 1/4 cup basil, fresh, cut into ribbons, divided
  • 2 tsp minced garlic, or less to taste
  • 1/2 tsp table salt, or more to taste
  • 1/4 tsp black pepper, freshly ground, or more to taste

Instructions

  • Preheat oven to 450ºF. Coat a large roasting pan with cooking spray.
  • Place green beans in a single layer in prepared pan and coat with cooking spray. Roast until desired doneness, stirring once or twice, about 10 to 15 minutes.
  • Meanwhile, in a medium bowl, combine tomatoes, 2 tablespoons of basil, garlic, salt and pepper; set aside.
  • When green beans are finished, remove from oven and spoon tomato mixture into pan; toss thoroughly. Serve hot, room temperature or chilled, topped with remaining 2 tablespoons of basil. Yields about 1 cup per serving.

Notes

  • This is the perfect side for a burger, grilled chicken or steak. It's equally delicious served on mixed greens drizzled with balsamic vinegar, with herbed brown rice, or added to marinara sauce and then tossed with pasta and topped with shredded cheese.

Chocolate Cherry Oatmeal Cookies

Ingredients
  • 3/4 cup all-purpose flour
  • 2 Tbsp unsweetened cocoa
  • 1 tsp baking soda
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 tsp table salt
  • 3/4 cup butter, at room temperature
  • 1/2 cup sugar
  • 3/4 cup packed light brown sugar
  • 2 large egg(s)
  • 2 1/2 cup uncooked oatmeal
  • 1/2 cup dried cherries

Instructions

  • Preheat oven to 350ºF. Combine flour, cocoa, baking soda, cinnamon, nutmeg and salt together in a small bowl; set aside.
  • Place room temperature butter into bowl of a mixer and mix with a paddle attachment until smooth, or beat with an electric mixer. Slowly pour granulated sugar in an even stream into butter and mix on high speed until fluffy, about 3 minutes. Pour in brown sugar, mix until incorporated and then scrape mixture down from sides of bowl.
  • Slowly beat in each egg one at a time until incorporated. Slowly beat in flour mixture until incorporated.
  • Scrape mixture down from sides of bowl and stir in oatmeal and then dried cherries. (Note: Freeze dough at this point or continue to step 6 for baking.)
  • Scoop rounded teaspoonfuls of dough onto a nonstick sheet pan, a pan lined with parchment paper or a silicon baking mat about 1 1/2 inches apart.
  • Bake for 10 to 12 minutes, until edges are set. Cool completely. Either serve cookies or stack between sheets of waxed paper in an air-tight container and freeze for up to two weeks before serving. Yields about 1 cookie per serving
Raspberry-Peach Cobbler

Ingredients
  • 6 medium peach(es), halved, pitted and thinly sliced (about 1 3/4 lbs)
  • 3 Tbsp powdered sugar
  • 1 cups raspberries
  • 3/4 cup all-purpose flour
  • 3 1/2 Tbsp sugar, granulated, divided
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp table salt
  • 3 Tbsp unsalted butter, cold
  • 1/3 cup reduced-fat sour cream
  • 1 tsp vanilla extract

Instructions

  • Preheat oven to 350ºF.
  • Place peaches in a medium bowl; toss with powdered sugar until sugar dissolves. In an 8-inch square baking pan, arrange peach slices in several layers; sprinkle raspberries over top.
  • In a large bowl, combine flour, 3 tablespoons of granulated sugar, baking powder, baking soda and salt. Cut butter into flour mixture and work in with a fork or pastry cutter until flour resembles course crumbs. Add sour cream and vanilla; mix with a fork until dough comes together.
  • Place clumps of crumb mixture over fruit; sprinkle with remaining 1/2 tablespoon of sugar.
  • Bake until top is golden brown and fruit begins to bubble, about 40 to 45 minutes. Cool 10 minutes before serving. Yields about 1/2 cup per serving.

Notes

  • Feel free to substitute thawed, frozen fruit for the fresh fruit, if desired

Game Point!!




Wow, what a great weekend! We have been really busy and enjoying the great weather! Hopefully, all of our friends are doing alright with the fires going on down here in Payson and Santaquin. I truly have never seen anything like these fires. Many of our friends were evacuated and are doing well, with the exception of a really smoky house and lots of ash in their yards. We are ever so grateful to our wonderful fire fighters and other emergency personnel who have truly been heroes! Thank you!!!
Last week, Joyce, in Payson's meeting, shared a great strategy for keeping control in tough situations. She shared that when she is faced with a difficult food situation, she asks herself, "How do I want to feel when I am done?" "How do I want to feel on the scale tomorrow?" These questions really help her to make better choices, the better part of the time. Her wonderful insight has already helped me, personally, a TON!!! You just never know where you are going to hear the next little bit of advice that will just make all the difference in the world! Hey, that was in a meeting I heard that, right? GET INTO A MEETING !!!
The Olympics are on their way and to honor this, this week in meeting we are going to be talking about the fact that how we FEEL about the activities we do really can make a big difference for us. Our attitudes about activity are what help up to keep going!

Get In Control!!! :)

Hello Weight Watchers!
Did ya'll try any of the Slimming techniques from last week? How's the posture? It is SO important for us to know that we can look our best at ANY weight! You are all beautiful women and men and the 10 tips we learned last week can really help to bring out our trimmest lines . Our weight loss journeys may be a bit long, but by looking our best along the way- we can really keep the motivation up, up, up!!!
This week we are going to talk a bit about the power of the mind! There are people out there who seem to do things flawlessly and with out effort. The secret to their success is meticulous planning and practice! Come this week and see how we can use their secrets of success to help you with achieving success on your weight loss journey!
Below we have a few yummy desserts from Lynne, a Lifetimer on Monday mornings! The Chocolate muffins are Lynne's favorite night time treat along with a Healthy Choice fudgesicle- all for 2 POINTS!!! Yumm! It's her evening ice cream brownie sundae! Yeah Lynne and thanks for the great recipes!!!
Chocolate Bran Muffins 1 Point
Pam Wilson & Lynne Christy
Mix and let sit for 10 mins:
3 cups All Bran ( cereal)
2 1/2 cups warm water or coffee (regular or decaf)
Add:
1 tsp. vanilla
1 1/2 tsp. baking powder
1 box Krusteaz Fat Free Brownie Mix ( prepare as directed on the box)
Bake @ 350 for 30 minutes
makes 24 muffins. They are best if they sit in fridge in baggie over night.
I have also put a packet of splenda in the chocolate ones.
I have used the Fat Free blueberry and the Cranberry-orange mixes. I add extra fresh or frozen blueberries to the blueberry and extra cranberries to the cranberry.

Carolyn's Gelatin Cheesecake
1 (12-ounce) container low-fat (1 percent) cottage cheese

2 (0.3-ounce) boxes sugar free
strawberry gelatin, plus 1 box (recommended: Jell-O)
2 ready-made light graham cracker crusts
1 pint fresh strawberries, plus extra for garnish
1 (8-ounce) container frozen light whipped topping, thawed

Put cottage cheese in a blender. Make 2 boxes of the gelatin, using 1 cup of hot and 1 cup of cold water. At once, before it jells, add to cottage cheese. Blend until smooth. Pour evenly into crusts and refrigerate until set. Cut up fruit and place on top of pie. Make remaining package of gelatin as per instructions on box. Pour it on top of fruit and put it in refrigerator until set. Put whipped topping on top. Garnish with more fruit. This makes 2 pies. 3 to 4 POINTS per 1/8th of the pie.

212 Degrees!

Happy Hot One!
Boy it is really heating up nicely for us, isn't it? I hope you all had a super nice 4th of July!!!
This week we are talking about heating up our weight loss. We all can remember the times we have been "hot to trot" with regards to our weight loss. We are tracking, we are measuring, WE ARE LOSING! Come this week and learn two secrets to successfully rekindling the fire that keeps us going!

Why I am Walking!

I have a hard time putting into words the reason I am walking (running, probably). I have seen, in the women who face breast cancer, a real courage that is not seen very frequently. They live with such conviction, and their ability to fight ,and not give up, inspires me so much.
Last year, the week after the event, my sister-in-law's mother died after a 17 year battle with breast cancer. She never quit fighting, but more importantly, she never quit LIVING. At her funeral, Elder David A. Bednar spoke and quoted Elder Neil A Maxwell's comments about what he had learned during his battle with cancer. He told Bednar, "It is far more important to NOT SHRINK, than it is to survive."
So many of the wonderful women in our lives face this disease, and they live each day, and fight each day, with such honor and courage. Let us honor them and fight along side of them.
Please come walk with us and share in this great celebration of their courage, beauty and lives!

Trick Yourself!

Hello Everyone!
I hope all is well with ya'll! This weather is sure warm . You will not hear a complaint from me, though. It feels so good to be warm all the way through!

This weeks meeting topic is so great. We all have had times when we were wishing our tummies are a bit fuller. This week we will discuss ways that we can "trick" ourselves into feeling fuller, thinking we are eating more, etc. You will come away from this meeting with some ideas in hand and a step up on our battle for a healthier life.

Destination- Weigh Loss!

Aloha!
What a great weekend we are having! I hope ya'll are enjoying this beautiful "finally" summer weather!

How is National Self-Indulgence Week going? It is so important to take care of yourself on a regular basis and it is very important to remember that you can do it within the guidelines of either the Flex Plan or the Core Plan. Working in the yummy num nums into your plan will really keep your satisfaction level up and the world a better place. Don't forget our "non-food" ways to self indulge, a massage, a bubble bath or especially, a good book! If it has been forever since you treated yourself in a "non-food" way, look back to the past for a few reminders.

Now... in case you went a little overboard with the whole "self-indulgence" thing- be sure to hit a meeting this week to discuss how we can bring ourselves back on track. This road we travel to a healthier life can meander a bit . Join us to re-set your course and make it to your destination, a healthier you!

Challenge Tip #6

Hello Friends! How goes the CHALLENGE? I am loving this!!

Tip #6
Do you like dessert? I do! My tip for you is to share the LOVE ! We all have our favorites, no need to call them by name, anything with chocolate will do, OK- anything with sugar will do, ALRIGHT- anything that fits into my mouth will do! So what can we do? Here's the tip- if you are having dessert tonight, invite enough people over to eat the whole thing, your kids friends, family or neighbors, so long as they will eat, they will work. This will do two things for you, #1- you get some of what you have been craving, #2 you can have fun with your loved ones. If you are too shy to invite people over, pack up the leftovers and take them to a neighbor or someone you don't even know, you can even door-bell-ditch it If all else fails, just TOSS it in the trash after you have had your tasty morsel!

*** WARNING WARNING WARNING- if having a dessert around is just way too much for you- SKIP THIS CHALLENGE! If you will eat the whole thing before you even know what happened, then save this one for a time in the future, when you are ready :) There is NO SHAME in that at all, not one little speck! ***

Challenge Tip #5

Are you ready for #5- (ready or not...)
I want you to "move it". Yep- get out there and get going. Turn on the radio and shake it for a few songs. Put on the roller blades and cruise the neighborhood. Dust off that bike and feel the wind in your hair (that is under a helmet :). Pull weeds for 20 minutes (or 20 hours if it is my garden). I don't care what you do- just do something a little out of the ordinary, a smidge out of your comfort zone maybe. "I like to MOVE IT MOVE IT, I like to MOVE IT MOVE IT!" You know the words- lets get MOVING!!!

Anna's Favorite Jello Salad

POINTS® Value: 2
16 - 1/2 Cup servings
Ingredients:
1 small pkg dry, powder Jell-O Sugar Free any flavor
2 cup Crushed Pineapple In Its Own Juice, drained WELL!
1 cup canned unsweetened mandarin oranges, drained well
24 oz fat-free cottage cheese
8 oz Cool Whip Free Whipped Topping
Mix all ingredients together well, except cool whip. Fold in Cool Whip last. Refrigerate. Ooo La La!

Challenge Tip #4

Tip #4 Know BEFORE you go!!
If you are headed out to dinner this weekend- have a game plan IN ADVANCE! Go to your Dining Out Companion, E-tools, or the restaurants website. Make a plan and stick to it. Restaurants are FINE and a great place to eat, but they can be VERY tricky. Knowing the POINT values before you go will help you stay on track. Knowing the POINT values before you go will let you feel comfortable and able to enjoy your meal, worry and guilt free.

*** Don't be afraid to ask for a doggie bag when your food comes- the serving sizes are HUGE and most can be split in half and saved for lunch (or dinner) the next day ***

Ready for tip #3?
BANISH the BLT's! And I am not talking about the sandwiches! I am addressing those nasty little "bites, licks, and tastes!" EVERYTHING we put into our mouths has a POINTS value. EVERYTHING!!!! So here is the challenge- mark one POINT for EVERY blt you take. I mean it- one little bite of your sons PB & J, one nibble of a cookie or taste of tonight's dinner. Mark 1 POINT gone forever :) This is the only way to combat this habit- If you BITE it you WRITE it! No justifications, no pretending that it was so small it has zero POINTS (even if it is).

***exception to the rule- if your rabbit will eat it, you can too- no POINTS :) ***

Challenge Tip #2

Alright- how is it going? Are you feeing Better, Stronger, Faster than before? Are you ready for Tip #2? Here goes.

Tip #2 Shake up those POINT values!
If you always eat 4 POINTS for breakfast, eat 6. If you always have 8 POINTS for dinner, have 6. If you eat a 6 POINT snack at night, make it a 2 POINTer. If you have a one POINT snack at 10 AM, make it a 2 POINTer. If you already vary your POINT values from meal to meal and from day to day, then try dividing your Daily POINTS Target by five. Have five meals, spaced evenly throughout your day. Do ya get my drift? This is just one more way to throw a curve ball at ourselves. This not only keeps our bodies guessing, but it really brings some life back into our sometimes monotonous routine.

Tip #1 EAT SOMETHING NEW AND DIFFERENT!
We become very complacent and routine in what we eat. By eating something new or different we will measure this new thing. We will calculate the points. We will also give our body the challenge of eating something different and new. Our bodies are very clever and conservative. They really get good at dealing with the "norm". Shake things up a bit. If you always have oatmeal for breakfast, have an egg on whole wheat toast or a smoothie.

Challenge June 2008!

I'm sending out a challenge that another WW leader sent me! This is for you and for me, because I want to stay on track this summer as much as you do.

Your Challenge, should you chose to accept it is: Let's (you and me) follow the plan perfectly for the next seven days. I mean it - perfectly. AND, lets do some sort of movement/activity/
exercise for six out of the next seven days. Let's stay within our points budget, drink enough water,
have two healthy oils and and two servings of milk every day, and have 5 servings of fruits
or veggies every day. Do you think it's possible? Can we do it?! How many of you are
willing to take this challenge? Starting tomorrow, June 3, let's see how much this newsletter
group can lose in 7 days.

So, if you come to my meeting on Monday, Tuesday or Wednesday, try to come to my scale and tell

Chicken Salad

Servings: 6
Ingredients
3/4 pound cooked chicken breast, cut into bite-sized pieces
1/2 cup celery, finely diced
1/3 cup dill pickle(s), or sweet gherkins, finely diced
1/4 cup reduced-calorie mayonnaise
2 Tbsp reduced-fat sour cream
2 Tbsp parsley, fresh, chopped
1 tsp Dijon mustard
1 tsp fresh lemon juice
1/2 tsp table salt
1/4 tsp black pepper, freshly ground
Instructions
Place all ingredients in a large bowl; mix until blended. Yields about 2/3 cup per serving.

Tex-Mex Bean Salad With Creamy Salsa Dressing

8 POINTS® Value, 4 Servings
Think of this ingredient-packed salad as bean nachos with the works. Serve the chips on the side or crumble them on top for crunch. You can also serve the bean mixture on its own as a dip.
Ingredients
1/3 cup salsa, medium or spicy
3 Tbsp reduced-fat sour cream
1 Tbsp apple cider vinegar
3 cup canned black beans, drained and rinsed (about two 15.5 oz cans)
1 cup grape tomatoes, halved
3/4 cup canned yellow corn, or fresh, cooked kernels
1/2 cup avocado, diced
1/2 cup scallion(s), sliced
1/2 cup cilantro, fresh, chopped, or less to taste
6 cup romaine lettuce, shredded
2 oz Cabot Pepper Jack, or other brand, cubed or shredded
24 items baked low-fat tortilla chips
Instructions
In a large bowl, stir together salsa, sour cream and vinegar until blended. Add beans, tomatoes, corn, avocado, scallions and cilantro; toss to mix and coat.
Place 1 1/2 cups of lettuce on each of 4 serving plates; top each with 1 1/2 cups of bean mixture. Sprinkle each serving with 2 tablespoons of cheese; arrange 6 chips around edge of each plate. Yields 1 salad per serving.

Sustaining Motivation

Hello Friends!

It really feels like the nice weather is here to stay! Yeah!! My watch tan line is even returning :)

This week in meeting we will be looking at many great ways to keep our motivation alive during our relaxing summer festivities. We all know (by doing our homework last week) exactly what we want to have happen by Labor Day in September. We have developed our Winning Outcome and have come up with the steps we need to take to get there. This week we are looking at one of our Helpful Habits and one of our Tools for Living that will help us to keep our motivation where it needs to be to fulfill our Wining Outcome.
