WALK-IT Challenge information- 1pm Saturday May 21st at Willow Park in Lehi. Directions from I-15. Exit I-15 at Lehi Main Street and head West about 3.5 miles. You will pass the round about, the ball fields then the Conoco Mini mart gas station and go through a light. The sign to the park is SMALL, green and on the right. We are meeting at AREA 6. The easiest way to get to area six is, once you are in the park, make a right at the first fork. Loop around the "pond" and you will come to AREA 6 on your right. The park address is 9800 W 300 N in Lehi. The other address that has been posted is incorrect and this is the one to use :) It is REALLY easy to find, so COME on out and join us for the FANTASTIC 5k :) Oh...BRING YOUR WATER BOTTLES IF YOU THINK YOU MIGHT NEED A DRINK ON THE TRAIL, it might be hot...it might be snowing... who knows with spring in Utah!!! ;D We will have ice cold water bottles and fruit at the finish for all :) Please plan to arrive by 12:30, so we can start right at 1pm :)

Chicken, Mango and Spinach Salad

½ cup fat-free chicken broth
1 lb. chicken, breast, raw, without skin and bone
4 cups spinach, baby leaves
2 small mangoes cut into bite-size pieces
1/3 cup mango nectar
2 tsp. honey mustard
½ tsp curry powder
1 Tbsp. white wine vinegar
1 tsp. canola oil
¼ tsp. black pepper
¼ tsp. salt
Heat broth in a small nonstick skillet. Add chicken in one layer; cover and simmer until chicken is cooked through, about 10 minutes per side. Remove from heat and allow to cool.
Meanwhile, arrange spinach on a large serving platter; top with mangoes. Cut chicken into bite-size pieces and arrange over mangoes.
Stir together remaining ingredients in a small bowl; pour over salad and toss to coat. Yields about 2 ¼ cups per serving.
