Veggie Dip SALVATION!!!

Are you all excited for the new year??? I sure am! I just wanted to send out a reminder that all of or meetings will be reopening on Friday, January 2nd, 2009. In the Provo Center, there is a Friday morning meeting at 10am and two Saturday morning, one at 8 am and one at 10 am. There will be a few additional New Member Meetings at various times and locations. Please see the Weight Watchers of Salt Lake website for more information on times and locations. As for my meetings, we will be all ready for you Monday the 5th (Provo), Tuesday the 6th (Provo), and Wednesday the 5th (Payson), all at the regular times! I can't wait to see you!!!
Now for the good stuff. Just in case you already did not know- YOU CAN MAKE GREAT CHOICES FOR NEW YEAR'S!!! Did you hear me? Try to focus on what you want to see January 2nd on the scale. Focus on your goals and remember that there are a few things worth passing on to make your Winning Outcomes are reality! Please remember those Filling Foods (green diamonds). These are your best friends everyday of the week and especially for the Holidays. I have a great new veggie dip recipe that is AMAZING and pretty much ZERO points. It is DOWN RIGHT DELICIOUS!! **** I say "pretty much zero" because if you ate cups and cups of it, your are going to be adding some POINTS values Use responsibly and you are going to be fine ****
Here goes:
Buttermilk Tomatillo Dip
1 pkg Hidden Valley "The Original Ranch Buttermilk Recipe Salad Dressing Mix (Be sure to get the BUTTERMILK recipe) JUST THE POWDER
1 jalapenos
2 tomatillos, de-husked and quartered
1 bunch cilantro
juice of one lime
2 cloves of garlic
2 Cups fat free mayonnaise
Starting with the tomatillos blend in the blender. This is the most amazing dip ever. 1/4 Cups of the dip is ZERO POINTS :) 1/2 a cup is 1 POINT. 2 POINTS for a cup ;) It's 7 POINTS if you eat ALL of it :) If you are leary of jalapenos, add a 1/2 to start with and then taste. Add more as needed. I have added the whole thing and find it very mild. This recipe makes nearly 4 Cups.

Merry Chritmas!

Merry Christmas to you all!
I hope this greeting finds you all well and ready to celebrate! I love this time of year!

Please remember that all Weight Watchers meetings will be closed from Wednesday the 24th though January the first, reopening on Friday the 2nd of January 2009! Don't forget what you want to see on the scale, January 2nd. By keeping our eye on the prize, we are often better able to make some great choices when it really counts. Remember that life was meant to be lived and that means some special treats during the holidays. The Momentum plan takes that all into account. We have our weekly points allowance and activity points. Also, if you make sure to pile your plates with the Filling Foods, you'll be less hungry and more in control when temptation comes 'a calling. You can make great choices! You can have a great time with your friends and family.

Surviving the Holiday's PART I

Happy SNOW! You know, for as much as I am not a big fan of the cold, I DO LOVE SNOW!! It is so pretty and peaceful! I have to confess, I even like driving in it! I know I am NUTS!!!
So, how is the Momentum Plan going for you all? Did you read your materials as if you were a new member seeing it for the first time? Are you adding in those filling foods? Are you seeing GREEN DIAMONDS? What are your bodies hunger signals saying to you? The new Momentum Plan is a sustainable and healthy plan. As you live the Momentum Plan, it will become, over time, second nature for you. You can do this!
Now, I imagine that most all of you have already experienced a party or two so far. I bet many of you have made some great choices and some not so perfect choices
. This week in meeting we are going to make some plans to survive these wonderful Holidays and come out on top! I'll give you a hint, by attending your meeting this week, you are 1/2 way there!!! I can't wait to see you all!!!

Festive Feta Spread

Ingredients



7 oz roasted red peppers

1 pound(s) 1/3 less-fat cream cheese

4 oz reduced-fat feta cheese

1 large garlic clove(s)

1/4 tsp black pepper

3 tbsp dill

1/4 cup(s) dill

10 1/2 oz baked low-fat tortilla chips

Instructions

  • Slice off a 1 1/2-inch piece of roasted pepper to use for garnish; wrap and refrigerate. In a food processor, combine remaining roasted peppers, cream cheese, feta cheese, garlic and black pepper; process until smooth. Add chopped dill; pulse until evenly distributed.

  • Scrape mixture into a serving bowl; cover with plastic wrap and refrigerate at least 1 hour (or up to 5 days) to firm up slightly and for flavors to blend.

  • To serve, smooth surface of dip with a spatula. Arrange dill sprigs on top in a circular fashion to form a "wreath;" cut reserved piece of roasted pepper into tiny "berries" and place on wreath. Or create any other decorative pattern you desire. Yields about 3 tablespoons of spread and 8 chips per serving.

Notes

  • This recipe can be cut in half to serve 8, but it keeps so well (up to 5 days refrigerated) that it makes sense to make the whole batch to have on hand for those unexpected holiday guests. Serve with pita wedges, whole grain crisp breads or crackers and/or raw vegetables. (The dip alone is 2 POINTS values for 3 tablespoons.)

Level of Difficulty: Easy
So comforting on cold winter days. Lean Canadian bacon gives a hint of smokiness but we give vegetarian tips below, too.

Ingredients



2 medium carrot(s)

2 medium celery

1 medium onion(s)

2 medium garlic clove(s)

2 cup(s) dry lentils

3 piece(s) bay leaf

1/2 tsp dried thyme

1/2 tsp table salt

1/4 tsp black pepper

8 cup(s) canned chicken broth

4 oz Canadian-style bacon

Instructions

  • Place ingredients in a 4- to 5-quart slow cooker in the following order: carrots, celery, onion, garlic, lentils, bay leaves, thyme, salt, pepper and broth. Cover slow cooker; cook on low setting for 6 hours. Uncover, stir in bacon and heat for 30 minutes more; remove bay leaves. Yields about 1 1/2 cups per serving.

Notes

  • To thicken soup, remove 1 cup of cooked lentils and puree in food processor; stir back into soup.

    For a lighter flavor, replace 4 cups of chicken broth with 4 cups of water.

    To make this vegetarian, substitute a cup of sliced shiitake mushroom caps for the Canadian bacon and use vegetable broth (could affect POINTS values).

    For additional flavor, top each serving with a splash of white wine vinegar.

2009 Momentum Plan is HERE!!!

Happy Holidays!!!
I hope that everyone is having a GREAT Holiday Season! Remember one great way to stay on track this season is to be PERFECT when you can! Every meal, every day that is "regular" and not littered with celebrations needs to be A #1 perfect! There will be plenty of fudge covered land mines to keep you on your toes. Don't forget your low energy density foods to keep your hunger in control! These food are very filling and satisfying. You can do this, you can really have tremendous success this time of year!
Now for the REALLY good stuff! This week we will be rolling out the new AMAZING Weight Watchers Momentum Plan for 2009. It is ALL NEW and just BRILLIANT!!! Be sure to get yourself into a meeting this week to find out all of the new and exciting changes!
