Holiday Success and the PointsPlus Plan :)

Happy Sunday Evening!!

We had the best time last week seeing all of the tremendous success at the scale after one week on the the PointsPlus Plan.  I can't wait to see what happens this week!
THIS WEEK IN OUR MEETINGS we get to look at the strength of the PointsPlus Program as it relates to our holiday eating!!  Parties, gatherings and shopping….,OH MY!!!  You know....during this time of year- things get CRRRRAAAAZZZZYYYYYY!!!  Running here- running there.   THIS IS THE PERFECT TIME to FULLY EMBRACE POINTSPLUS!!  Why?  Because of the sense of control you'll gain!! GET INTO A MEETING!!  Figure out how PointsPlus will make your holiday season the most successful one yet!!!

WENDY'S CHILI KNOCKOFF

1 lb. extra lean ground beef, browned, drained, and rinsed under running hot water (in fine mesh strainer)

2 cans Ranch style beans, sauce and all

1 can diced petite tomatoes

1 jar salsa (about 12 oz.)

 

Combine everything in a slow cooker, and cook on low, all day.  Makes 6 BIG bowls, for 6 PointsPlus™ Values, each!  What a deal!

Pushing Past Plateaus!

Happy Scottish Festival Weekend! 
I am sure that many of you do not know that this weekend is the Scottish Festival down here in Payson, but it is :)  I sure LOVE the bagpipes!  YIPEE :)  I hope that some of you made it.  What a GREAT culture.  I am SO proud to be Scottish!
Well, this weeks meeting is a CANNOT miss!  We are talking about pushing through plateaus.  Let's face it, we are going to hit a few a plateau or two on our journey to a healthier life.  The trick is understanding what they are and why they happen.  This week we are going to tackle the myths about plateaus!

Fruit and Veggie Challenge is HERE!!!

Happy Independence day!!!  I hope y'all are having the best weekend EVER!!!
A wonderful new challenge is coming our way.  In the form of fruits and vegetables that is.  Get into your meeting this week to get started with our 4 weeks to 5 servings challenge.  The health benefits associated with eating five servings every day are just DROP DEAD AMAZING!  I can't wait to share this with everyone!

Packing Your Plan to Go!

I have to say, I am really missing some of y'all in the meetings lately :(  I know the summer is busy, but 45 minutes is worth it :)  YOU ARE WORTH IT!!!  Speaking of the meetings.....
The meeting this week CAN'T BE MISSED!!!  Planning on a vacation this summer?  Planning to stay on plan during that vacation?  OF COURSE YOU ARE!!  But- you need to get pumped- you need to lay out your plan- you need to have a WINNING OUTCOME!  That work can be done IN A MEETING!!  Sure- maybe you are just looking at making sure you are active during your vacation, or paying attention to your Good Health Guidelines.  Something needs to be planned in order to walk away from that vacation feeling successful and empowered!  Anything is possible with Weight Watchers!  Vacation success is definitely possible!!  Get into a Meeting!! 
Below is the dessert that I made for dinner tonight.  It was good.  I used up a ton of little Rome apples that nobody liked around here.  I bet peaches or plums would work as well.  I'll try the plums later this week :)  I doubled it and it worked out fine.  I also just piled all of the apples in the bottom of the pan and spooned the batter evenly over the top.

The Art of Estimating :)

Happy Father's Day :)  I hope that everyone is enjoying this amazing weekend.  Could you ask for more perfect weather???  We even had Father's Day breakfast outside.  My sweet hubby got to eat in a lounge chair :)
The meeting topic this week gets us BACK TO BASICS.  So- my question is this- when was the last time YOU measured out or at least accurately estimated the amount of food you were about to eat?  Seriously?  GET INTO A MEETING THIS WEEK so you can remember why PORTION CONTROL makes a difference!!  What exactly ARE we getting from NOT measuring/at least estimating that morning cereal?  That Pasta for dinner?  Those sunflower seeds on our salad?  I'll tell you what we're getting….we're getting frustrated because we can't achieve or maintain our weight-goal!  Meetings make a difference….a perfectly portioned- controlled difference!!!!  Get into one!!
I can't wait to see y'all!

Tricks for Tracking

If I have said it once, I have said it a MILLION times, the magic of weight loss is in the tracking.  This weeks meeting is all about fine tuning our tracking skills.  You don't want to miss this baby!
Also, don't forget to bring all the knowledge that you learned this week about how to keep hunger at bay.  I can't wait to hear all of your great epiphanies!
OK- so this is REALLY short and sweet, but my sweet hubby is resting and I am in need of a nap too.  His surgery went well and now we can focus on the healing.  Thank you so much for your love, concern and prayers.  We have felt them and really appreciate it!

Taking Charge of HUNGRY!!

Hey!  I just got off of the phone with AnnaLisa and she told me that the Walk-It Challenge was a total HIT!  I hear that there were a million of you ready to walk and roll!  I am SO glad to hear it!  It sounds like we learned a TON and are making notes to make sure that next years event is even better!  WAY TO GO!!  I am so proud of y'all!  I am so sad to have missed this big event, but as some of you have heard, my sweet husband was practicing his Superman tricks and took a bad spill off of our roof.  (I'm just kidding about the Superman tricks, the ladder decided it would rather not do it's job).  He suffered some serious injuries to one of his legs and will be laid up for quite a while.  Thank you for your concern and prayers.  They are much appreciated :)
Now for this weeks GREAT meeting.  Do any of you just really wonder how ever to deal with that terrible monster HUNGRY???  You just cannot miss this meeting.  We have great ideas and tips for winning the never ending battle with our appetites!
I can't wait to see you all this week!

Walk It Challenge!

Today is the day!!!  If you are in the Provo area, the Walk It challenge 5k will begin at Fort Utah Park on Geneva Road in Provo.  Please take I-15 to Provo and get off at the Center Street Exit and head toward the lake/airport/WEST! :)  After about 2 blocks you will come to Geneva Road.  Take a right (north).  Fort Utah Park will be on your right (the East side of the street), about a block.  There is a parking lot with a large pavilion right behind it.  Please meet at the pavilion.
The 5k will begin right at 1pm.  The runners will go first, followed by the walkers a few minutes later.  There will be water for you at the end.
You gus are all going to do GREAT!!! :)

No Monday Meetings :(

I hope that you are all enjoying this WONDERFUL Memorial Day weekend.  What GREAT weather we are having!!!  Now, just in case any of you have forgotten, there are no meetings for Monday, May 31st.  Please get into another meeting this week.  YOU ARE SO NOT GOING TO WANT TO MISS THIS ONE!!!
You see….when we are checking out at the store and look at the magazine racks, we see MILLIONS of magazines (okay...maybe not millions) that promote amazing weight-loss with quick gimmicks and tricks.  But really?  I mean REALLY!?  THERE ARE NO TRICKS OR GIMMICKS THAT CAN MAKE WEIGHT LOSS THAT LASTS POSSIBLE!!!  This week's meeting reminds us- focuses on- and gets us into the BRILLIANCE that is WEIGHT WATCHERS!!  WE KNOW WHAT WE'RE DOING AND WE BRING THE RESULTS!!  LIFETIME RESULTS!!  Don't EVER be fooled.  Don't EVER buy in to the gimmicks…the thinking that "you can't eat after 7:00 PM" or " you have no control over your metabolism."  It's energy in vs. energy out.  GET INTO A MEETING so that you can stop the craziness, trust in Weight Watchers, and WATCH YOURSELF CHANGE!!

LULLABY MUFFINS
Points Value: 2

Serves: 12 

Serving size: 1 muffin

 

2 cups whole wheat pastry flour

1/2 teaspoon salt

1 tablespoon baking powder

2 large bananas

1/3 cup applesauce

1/4 cup honey

1/2 cup milk

 

Preheat oven to 350 degrees.

In a large bowl, combine the flour, salt, and baking powder.

In a blender, puree the bananas; add the applesauce, honey, and milk.  Blend well.

Pour the banana mixture into the dry ingredients and stir until just moistened

Line muffin tins with paper muffin cups, pour in batter, and bake 30 minutes or until tops are lightly brown and slightly springy.

NOTE:  Make sure you use whole-wheat PASTRY flour or you'll produce golf balls, NOT MUFFINS!  I also used unsweetened applesauce and fat-free milk.  These are a dense muffin.

 

Pork Fajita Wraps

Lime juice, cumin, onion and bell pepper wrap up a bundle of great flavor in these no-fuss "fajita-wiches".

Prep Time: 10 min

Total Time: 36 min

Makes: 4 servings 

1/4 cup lime juice

1 1/2 teaspoons ground cumin

3/4 teaspoon salt

4 garlic cloves, finely chopped

1/2 pound pork tenderloin, cut into 2x1/2-inch strips

1 large onion, thinly sliced

3 medium bell peppers, thinly sliced

4 cilantro-flavored flour tortillas, (8 inches in diameter)

1. Mix lime juice, cumin, salt and garlic in shallow glass or plastic dish. Stir in pork. Cover and refrigerate, stirring occasionally, at least 15 minutes but no longer than 24 hours.

2. Remove pork from marinade; reserve marinade. Spray 10-inch skillet with cooking spray; heat over medium-high heat. Cook pork in skillet 3 minutes, stirring once. Stir in onion, bell peppers and marinade. Cook 5 to 8 minutes, stirring occasionally, until onion and peppers are crisp-tender.

3. Place one-fourth of the pork mixture on center of each tortilla. Fold one end of tortilla up about 1 inch over pork mixture; fold right and left sides over folded end, overlapping. Fold remaining end down.

Serve these fast fajitas with a mixture of chopped tomato, chopped fresh cilantro, salsa and sour cream or yogurt.

Substitution Ideas:

¨       You can use 1/2 pound boneless chicken breasts or beef boneless sirloin steak instead of the pork.

¨       Regular tortillas make a great stand-in for flavored varieties.

¨       You can use 1/2 pound boneless skinless chicken breasts or beef boneless sirloin steak instead of the pork.

Melon-Cucumber Salad

Try these fruits of summer dressed with a sweet-and-sour dressing.

Prep Time: 5 min

Total Time: 1 hour 5 min

Makes: 6 servings 

1/4 cup vegetable oil  If you substitute canola or safflower oil—one serving of this salad will meet your Good Health Guideline of 2 teaspoons of heart-healthy oil for the day!  NOTE:  This ¼ cup of oil = 12 teaspoons—divided by 6 servings, = 2 teaspoons each serving.  Just RIGHT for a healthy Weight Watcher!

2 tablespoons lemon juice

1/2 teaspoon sugar

1/4 teaspoon salt

1/8 teaspoon freshly ground pepper

3 cups 3/4-inch pieces melon, (honeydew, cantaloupe, watermelon)

Assorted salad greens

2 small cucumbers, thinly sliced

1. Shake oil, lemon juice, sugar, salt and pepper in tightly covered container; toss with melon and cucumbers.

2. Cover and refrigerate at least 1 hour but no longer than 8 hours. Drain salad. Serve on salad greens.

Tips:

Fresh lemon juice brings the best flavor to this tangy dressing. You'll need 1 or 2 lemons—depending on their size—to get the 2 tablespoons needed here.

Time Saver:

You'll save plenty of time buy purchasing precut melon from the produce section.

Weight Watchers Electronic Food Scales

Just a quick note, the Weight Watchers Electronic Food Scale is going to be discontinued until the end of the year.  The Provo center has a few, a VERY few.  If you were wanting one, you have a bit of a chance right now.  I cannot get any for Payson until next year.  If you still would like one and are in Provo this week, it might be worth a short to stop by and see if they still have any.  There were some this morning.  You will need your Pocket Guide to show that you are a current member.  Good luck and good night ;)

Activity???

Good Rainy Mornig to Y'all!
Activity, activity, activity!!!  THIS WEEK's MEETING IS ABOUT FINDING OUT WHAT YOU REALLY WANT!!?  It's just not enough to keep moving for the sake of moving.  What we generally find is that it doesn't provide us enough incentive to keep going!!!  WE HAVE TO HAVE A GOAL!!  We have to KNOW WHAT WE WANT!  Get into a meeting.  Find out…without a doubt….what it is YOU are looking for as it pertains to YOUR ACTIVITY!!!

What's for Breakfast????

What a GLORIOUS Weekend we are having :)  When Utah decided to shine, it really shines!  All of the blossoms and spring flowers... WOW!! :)
Now, many of us find that mornings are just not our time of day.  We are either too busy with getting ourselves or family or both out the door.  Maybe we like to miss mornings entirely and sleep in ;)  No matter the reason, for many of us, breakfast gets overlooked.  The plain simple truth of the matter is that breakfast is a really important meal.  There are all kinds of urban legends about the magic of breakfast, but here goes ... people who maintain a healthy weight eat their breakfast.  So come in this week with your favorite breakfast ideas and let's make sure this important meal does not get skipped again!! ;)

Happy Mother's Day!

I just figured I check in to wish all of you amazing women a Happy Mother's Day.  Now, I know some of you maybe have not actually given birth to a child, but women have some very special and unique talents and gifts that make us indispensable.  I hope all y'all know that and are enjoying this special day devoted to YOU!!
Now for the tracking thing.  I am loving the Simply Filling Technique as usual.  It makes me SO happy when I realize all of the many things that I can eat.  I don't know why, but I really get in more of a rut with just counting points all of the time.  I am feeling more liberated.  I am also, as prescribed by the SFT (Simply Filling Technique), paying a ton more attention to my feelings of hunger and fullness.  I am very happy.  Now for dinner tonight, I did go WAY over satisfaction with fresh shrimp, grilled steak, chicken and veggies, but HEY, it wasn't fudge or red vines ;)  I'd like to splurge on some plain fat free Greek yogurt with berries, but I'm full.  It will have to be my treat tomorrow. ;)

SUPPORT Please!!!

First off, Happy Mother's Day to all of you wonderful women out there who love and mother the world around us!  I hope you are having a very nice day today!
I often wonder what I would do if I didn't have a family (kids included) that support my drive and striving for a healthy life style, along with a crazy running schedule too ;). They just get it.  ...and even when they don't, they support me anyway- and for this I am so grateful.  But you know….it used to not be like this.  In fact, I know MANY of us…..maybe even YOU struggle to find the support you need, the support you need to take care of you first and foremost.  So- GET INTO A MEETING THIS WEEK so you can delve into the ways to get the support you need.  We do not live in a bubble (well- we live in our WW bubble at our meetings), but then we have to leave that bubble and get back to the "real world."  It is in that REAL WORLD that we HAVE to find and seek and ASK for the support we need to live this healthful/happy lifestyle!  You have resources- strategies- all of which can be found in your meeting this week!  It's a VERY important topic!  I can't wait to see you!!!

Dining out! YES YOU CAN!!!

I am EVER so sorry this is late, I just plain forgot!  It was a party weekend with a 1/2 Marathon thrown in for fun ;)  I'm hoping that you had a GREAT weekend too
I am also sure hoping that you had a chance to take the Habit Profile in your Week 4 booklet.  It is a VALUABLE tool!  Do it right now if you have not had the chance ;)

How are y'all???  I am doing GREAT! :)
This weeks meeting is one of the most powerful, CAN NOT MISS meetings of the year!!!  It's time to remind yourself that YOU HAVE THE POWER to change your bad habits!  Habits just don't all of the sudden "pop up!!"  They are created, then fed….that's how they grow!  BUT YOU HAVE THE RESOURCES YOU NEED to replace unhealthy habits with healthy ones!  Don't allow things to happen to you!  Instead…..MAKE THINGS HAPPEN FOR YOU!!!  Let's get empowered together!!!

The Twilight Zone...

GLORIOUS weather!!!  We've had such a great time in the meetings learning all kinds of things about becoming better trackers and committing to being more active.  I am so excited about all of the wonderful changes you are making.  One meeting, one week, one small change at a time will make the world of difference in getting to your healthy life goals!  I am SO proud of you!!!
I know that many of us like to think that what happens for the 12 hours following our weigh-ins, that no mater what we eat, it has no points!  This might be a really nice fairy tale, but it simply is not true.  There are times, especially on the weekends and at celebrations where we think that it makes no difference what we eat, again, this is simply not true. This week in the meeting, we are going to be working on some strategies to make it through these challenging times
.  I can't wait to see y'all!

A Journey of Self Discovery :)

Hello Ladies and Gents!
I hope everyone is well and enjoying this 72 degree weather :)  I may have to eat dinner out side tonight!
Last week in the meetings we introduced the new Walk-It Challenge. This is going to be SO great!  Please mark June 5th on your calendar for a 5k on the Provo River trail.  We'll have more details very shortly. 
Now, this week in our meetings, we will be discussing the importance of self monitoring.  I say ALL THE TIME, you cannot change things that you are not aware of.  Come on in and see how this TREMENDOUS skill can help you toward you healthy lifestyle goals!

Creamy Chicken Tortilla Soup

2 cans Rotel tomatoes
2 cans chicken broth
1 can fat free refried beans
1/2 c. corn kernels
2 c. shredded cooked chicken

(crushed corn chips and reduced fat
 shredded jack cheese--opt.)

Combine tomatoes, broth, beans and corn in saucepan.  Stir and bring to a boil; reduce heat to low and simmer 5 min., stirring frequently.  Add chicken, heat through.  2 points per serving w/o chips and cheese.  Add 1 point each for 3 crushed chips and 2 T. cheese each bowl.

Cup O Chocolate Bread Pudding

1 swiss miss diet hot chocolate packet
dash salt
1/2 c. fat free egg substitute or 2 egg whites
1/4 t. coconut extract
2 slices white bread (sara lee or wonder lite)
1 t. mini chocolate chips
10 mini marshmellows

Combine cocoa mix and salt in glass.  Add 1/4 c. very hot water, stir til dissolved.  Add egg, coconut ext. and stir, set aside. 
Toast bread and cut into cubes.  Spray a large microwave safe mug lightly w/pam spray.  Add bread & top w/cocoa-egg mixture.  If needed, stir gently to ensure bread is soaked.  Top evenly w/chocolate chips and marshmellows.  Microwave for 2 min. 15 sec. until bread pudding is set.  (It will puff up once set)  ENJOY!!!    (side note:  I tried this, and it's delicious!  I didn't have coconut ext. so I used rum extract and a dash of cinnamon--yum!)


Southwest Chicken Salad

2-4 cups salad greens
1/4 c. corn kernels
1/4 c. black beans, rinsed
1/2 c. or so of favorite pico-de-gallo or salsa
2 T. fat free sour cream
3 oz. cooked, cubed chicken (I like mine with taco seasoning or Mrs. Dash--Mexican--in it)
2 sliced green onions
2 T. fat free shredded cheddar cheese
3 crushed corn chips

Layer ingredients, makes a huge salad, so you better be hungry, or share it!  8 points  (great with the creamy tomatillo dressing below)

Creamy Tomatillo Dressing

1 envelope buttermilk ranch dressing mix
1 c. light mayo
1 c. buttermilk
1 c. cilantro, lightly packed
3 peeled tomatillos (I find that the canned ones don't cause the dressing to separate the next day)
3 cloves garlic
1/4 t. cayenne & cajun seasoning

Mix all in blender well.  Makes 10  4T. servings, 2 points each!
