Bending With the Winds of Change

How are you doing????  I am sure enjoying the rest of this BEAUTIFUL summer :)  What a fun time of year!
I know a lot of you have been on vacation and busy with parties and get togethers.  I sure have missed you in the meetings.  We had a great drawing last week for those of you who participated and benefited from the summer Fruit and Veggie Challenge 2010.  Aren't those pocket guide covers CUTE!  We will be having another drawing at the end of August, so come on in and get in on the action...and all that closer to a healthier you!
This week in the meetings we will be discussing how we can handle the changes of life that come our ways!  DON'T MISS!.... I just miss you too much!

Creamy Potato Salad  - Serves 6 (1 cup serving), 2 Points per serving

1. Combine 1 1/2 lbs cubed red potatoes and 1/4 cup water in large microwavable bowl.  Cover with wax paper  and microwave on high until fork tender (aprox 7-8 minutes stirring every 2 minutes.) Drain and let cool.

 
2. Meanwhile, make dressing: Mix 1/2 cup plain fat-free yogurt (I use Yoplait Vanilla for a richer flavor), 1/4 cup reduced-fat mayonnaise, 2 large chopped hard boiled eggs, 1/3 cup diced red onion, 1/4 cup chopped parsley, 1 Tbsp Dijon mustard, 1/4 tsp salt, 1/8 tsp pepper (can use cayenne). 
 
3.  Stir potatoes into dressing.
 
4.  Sprinkled 3 strips crumbled crisp-cooked turkey bacon on top (I just mix it in to the dressing).
