A Sad Farewell

To MY Dear Sweet Friends-

Due to personal reasons, last week was my last week leading meetings for Weight Watchers.  I am officially taking a leave of absence for the next three months, and may return in September if things have settled down.  This has been an extremely hard decision and I will miss you guys so much.  You are not just Weight Watcher members to me, but are truly my friends.  I have been a Weight Watchers leader for the past 4 years and I have loved getting to know you, getting to celebrate with you, and I truly believe, and hope you feel the same, that we are all closer with each other than the typical Weight Watchers groups.  We've had a lot of laughs and I will always cherish our amazing meetings.

Michelle will be filling in for the Provo/Orem Monday meeting for the summer.  She is FANTASTIC and you will LOVE her!!  Tami will be filling in at the Payson meeting and as you already know, Tami is THE BEST!!  They will take WONDERFUL care of you!  I hope you take what you've learned with me and let it propel you to reach your goals with your new leaders.

I was able to say good bye to most of you in the meetings this past week, but I know I missed a few of you.  It is SO hard to leave, even if it is only for a few months.  Saying that I will miss you does not even begin to describe my feelings right now, but I hope you will stay in touch with me so I can still celebrate with you through all of your accomplishments--both in and out of Weight Watchers.

I will still be blogging and as you know, I LOVE your comments.  Please keep me in the loop :)

With ALL my love!!!

So I was RIGHT!!!

I added 10 PPV to Monday.  They brought home those Totino's Party Pizzas and I had a bout 1/3 of one for 6 ppv AND I ate a little bag of sunflower seeds for 4 ppv (my tongue is all numb this morning).  I was eating the seeds to keep me from eating the pizza.  It sort of sounds like a song, "There was a crazy lady who swallowed some seeds to not eat some pizza.  I don't know why she swallowed the seeds.  Perhaps she'll grow a brain and quit doing stupid stuff like eating everything!!!"  I didn't say it was a GOOD song.....
The seed eating didn't work cause I am WEAK and my hubby brought the pizza to me in bed.  :p  Any hoots, it is what it is and I am going to have to lay down some rules again and get a bit tougher!!!  ...and drink a TON of water cause I am SO swollen from all of the salt.  Sheesh!!!

They BETTER not bring any crap home from the store....

I am pretty sure that I am up a creek, cause my hubby went to the grocery store with 2 of my daughters.  Each one alone ALWAYS comes home with extra crap-ola, but all three at the store at the same time will not end well for me.  You may ask, why did I send them?? Why did I not just go on my own?  Well, I REALLY hate going to the grocery store and I'd rather not eat than shop.  Any hoots, I am just chilling out watching nothing on TV hoping that they don't come home with anything good to eat ;D

Updated Walk-It Challenge Info!! ****this is the correct address****

Hey Everybody!!!

Just a few AWESOME quotes for you and a yummy recipe :)  Be sure to come in and see us at the meetings this week :)  We miss you when you aren't there :(

WALK-IT Challenge information-  1pm Saturday May 21st at Willow Park in Lehi.  Directions from I-15.  Exit I-15 at Lehi Main Street and head West about 3.5 miles.  You will pass the round about, the ball fields then the Conoco Mini mart gas station and go through a light.  The sign to the park is SMALL, green and on the right.  We are meeting at AREA 6.  The easiest way to get to area six is, once you are in the park, make a right at the first fork.  Loop around the "pond" and you will come to AREA 6 on your right.  The park address is 9800 W 300 N in Lehi.  The other address that has been posted is incorrect and this is the one to use :)  It is REALLY easy to find, so COME on out and join us for the FANTASTIC 5k :)   Oh...BRING YOUR WATER BOTTLES IF YOU THINK YOU MIGHT NEED A DRINK ON THE TRAIL, it might be hot...it might be snowing... who knows with spring in Utah!!! ;D  We will have ice cold water bottles and fruit at the finish for all :)  Please plan to arrive by 12:30, so we can start right at 1pm :)

Provo Peeps- Don't forget that the Provo Center has moved up the hill into Orem, 1407 South State Street, right next to Subway (right behind Sunflower Market).  Come in and see our BEAUTIFUL new center with our AMAZING new "Princess" chairs :D

You won't fail if you're not perfect, you'll fail if you're not committed to improving yourself slightly each day.

Rather than aiming for being perfect, just aim to be little bit better today than you were yesterday.

We can reverse years of damage to our bodies by deciding to raise our standards for ourselves, then living differently. Old wounds heal, injuries repair, and the whole system improves with just a few changes in what we put into our bodies and how we move them.

Chicken, Mango and Spinach Salad

PointsPlus Value: 6

Servings: 4

½ cup fat-free chicken broth

1 lb. chicken, breast, raw, without skin and bone

4 cups spinach, baby leaves

2 small mangoes cut into bite-size pieces

1/3 cup mango nectar

2 tsp. honey mustard

½ tsp curry powder

1 Tbsp. white wine vinegar

1 tsp. canola oil

¼ tsp. black pepper

¼ tsp. salt

Heat broth in a small nonstick skillet.  Add chicken in one layer; cover and simmer until chicken is cooked through, about 10 minutes per side.  Remove from heat and allow to cool.

Meanwhile, arrange spinach on a large serving platter; top with mangoes. Cut chicken into bite-size pieces and arrange over mangoes.

Stir together remaining ingredients in a small bowl;  pour over salad and toss to coat.  Yields about 2 ¼ cups per serving.

The New Provo-Orem Center ROCKS!!! & The Walk-It Challenge is upon us!

Hi friends!!!
I just wanted to send a shout out from our Weight Watchers meeting and say HI!!!!

The Walk-It Challenge is coming upon us right quick here.  It will be held May 21st in Lehi at Willow Park (area 6), just off Lehi Main Street after the round-about and the ball fields.  It begins at 1pm, so get there by 12:30 so we can start on time.  There is no entry fee.  We will have water and fruit :)  I can't wait to see you!!!!  Please bring all of your friends and family!

Oh, I read this poem and thought about all of those times at the scale when the losses aren't anything like we'd hoped...

ONLY ONE POUND

Hello, do you know me?

If you don't, you should.  I'm a pound of fat,

And I'm the HAPPIEST pound of fat that you would ever want to meet.

Want to know why?

It's because no one ever wants to lose me;

I'm ONLY ONE POUND, just a pound!

Everyone wants to lose three pounds, five pounds, or fifteen pounds, but never only one.

So I just stick around and happily keep you fat.

Then I add to myself, ever so slyly, so that you never seem to notice it.

That is, until I've grown to ten, twenty, thirty, or even more pounds in weight.

Yes, it's fun being ONLY ONE POUND OF FAT, left to do as I please.

So, when you weigh in, keep right no saying, "Oh, I only lost one pound."

For you see, if you do this, you'll encourage others to keep me around because they'll think I'm not worth losing.

And, I love being around you- your arms, your legs, your chin, your hips and every part of you. Happy Days!!

After all, I'm ONLY ONE POUND OF FAT!!

Hey, many of you have already been in to see us at our NEW beautiful Provo-Orem Center [1407 South State Street, Orem (right next to Subway... behind Sunflower Market)].  For those of you who have not come in, PLEASE COME SEE US AGAIN SOON!   I know that I say it all of the time, but the meetings just aren't the same without you!!

Here are some delicious recipes just for you :)

Barbecued Chinese Chicken Lettuce Wraps (Thanks to Jolene Jackson, L-UT)

Prep. Time:  15 min

Cook Time:  10 min

Servings: 4

PointsPlus Values: 8

2 cups, 4 handfuls, fresh shitake mushrooms  (I just used canned, that's what I had)

1 1/3 to 1 ½ pounds thin cut chicken breast or chicken tenders

1 Tbsp. Olive Oil

Salt and Pepper

3 cloves garlic, chopped

1 inch ginger root, finely chopped or grated, optional

1 orange, zested

½ red bell pepper, diced small

1 small tin, 6-8 oz, sliced water chestnuts, drained and chopped

3 scallions, chopped

3 Tbsp. hoisin, Chinese barbecue sauce, available on Asian Foods aisle of market

½ large head iceberg lettuce, core removed, head quartered

Wedges of navel orange – platter garnish

Directions

Remove tough stems from mushrooms and brush with damp towel to clean, Slice mushrooms.  Chop chicken into small pieces.

Preheat a large skillet or wok to high.

Add oil to hot pan.  Add chicken to the pan and sear meat by stir frying a minute or 2.  Add mushrooms and cook another minute or two. Add salt and pepper to season, then garlic and ginger.  Cook a minute more.  Grate zest into pan, add bell pepper bits, chopped water chestnuts and scallions.  Cook another minute, continuing to stir fry mixture.  Add hoisin Chinese barbecue sauce and toss to coat the mixture evenly.  Transfer the hot choppedbarbecued chicken to serving platter and pile the quartered wedges of crisp iceberg lettucealong side.  Add wedged oranges to platter to garnish.  To eat, pile spoonfuls into lettuce leaves, wrapping lettuce around fillings and squeeze an orange wedge over.
