Let's try that again!!! Here's the PPV for the Angel Food Cake

Red Velvet Angel Food Cake

Course: cakes
PointsPlus™ Value:    2
Servings:  16

Preparation Time:  15 min
Cooking Time:  45 min
Level of Difficulty:  Difficult

This Southern classic has been retooled into a 4-inch-high angel food cake that's chocolaty-rich, moist and of course, bright red.

Ingredients

1/3 cup(s) unsweetened cocoa
1/4 cup(s) water
2 tsp vanilla extract
2 Tbsp food colouring
1/4 tsp table salt
1 cup(s) cake flour
  16 large egg white(s)
2 tsp white vinegar
3/4 cup(s) sugar
1 cup(s) Stevia Extract In The Raw Baking Serving

Instructions

Preheat oven to 350ºF.
In a medium bowl, combine unsweetened cocoa, boiling water, vanilla and food coloring; whisk and set aside.
In another medium bowl, combine salt, 3/4 cup of sugar and cake flour; mix well and set aside.
Using an electric mixer, in a large bowl, beat egg whites until foamy. Add vinegar; continue to beat until soft peaks form. With electric mixer running on slow speed, gradually add remaining cup of sugar; increase to high speed and beat until stiff peaks form.
Remove a heaping cup of egg whites and add it to chocolate mixture; gently combine and set aside.
Sift flour mixture over egg whites, a little at a time, and fold after each addition to incorporate. Add chocolate mixture and gently fold into egg whites. When just combined, turn batter into a two-piece 10-inch angel food cake pan with feet; smooth top into an even layer.
Bake until a toothpick inserted in center of cake comes out clean, about 40 to 45 minutes. Remove cake from oven and invert pan onto its feet so the inverted cake can cool properly (the cake will not fall out of the pan). If your pan does not have feet, invert it over the neck of a wine bottle or a glass soda bottle.
When cake is completely cool to the touch, loosen edges with a sharp knife and remove cake from pan. Slice into 16 pieces and serve. Yields 1 piece per serving.

Birthday FUN!

It was my oldest's 19th birthday today.  We had a fun lunch out.  I ordered a Green Bean Beef thing.  It was super tasty!  I had the Won ton soup without the won tons :)  For dinner I made sushi (California rolls) and this FAnTASTIC Red Velvet Angel Food Cake.  It pretty much rocked!  I found it on weightwatchers.com but changed the sugar from ALL sugar to only 3/4 C sugar with 1 cup of stevia in the raw.  I have never made an angel food cake from scratch; it wasn't too hard.  It was DELICIOUS!!  I planning on just one piece for 2 PPV, but caved and ate 2 more.  I am going to be making that one again ....and again!

Happy Day!!! :D

I'm pretty excited that I only went over my daily PPV by 2 :)  I am a ROCK STAR!!!  I did a bunch of strength training today that I will be doing from now on, so long as the back takes it well.  We shall see tomorrow.  It feels so good to be nearly healed :) ...just a little knee issue that will hopefully be taken care of in the next few weeks :)  I really didn't believe the doc's when they said it could take up to 6 months for a full recovery.  Life is a funny thing :)

Lame excuse to follow...

I only had two ppv's left for dinner.  I was on the treadmill and was planning on finishing my salad from lunch, for dinner but, as I was entering the kitchen, all weak from running, my sweet family had dinner on the table waiting for me...  spaghetti and FRESH french bread.  I ate it... then I ate the cookies my 13 year old made.  My big error came in eating the tres leches cake at lunch time.  I am in a funk :p  I think I am still depressed about last week or I am just planning VERY BADLY.  Oh a lighter note, my running is still getting better each week.  Happy day!  I'm off to go watch a movie with the family before bed :)

I am EXCEEDINGLY Grouchy!!!

So let the member side of me SHINE!!  Last week I did not eat all of my activity PPV's ( I earned over 80 and had 55 remaining).  I should have lost BIG time, but alas I did not!  I also did not weigh myself all week either.  I am going to go for another week of NO activity PPV's munching and see if it was just some fluke.  I am going to go back to weighing myself daily at home.  It really helps me to keep myself together.  It also keeps me from FREAKING out at the scale, like I did today.  I know what to expect, even if it is not what I want.  I did lose .8lbs.  Now I know I have told countless members that a loss is a loss, but I am 100% member today and I am ticked off!  I am going to go back and be more diligent in my measuring.  I may have over estimated a few things, but no more than usual.  Maybe I am turning into an every other week loser?  I don't know, but I am ornery and looking for comfort in all the wrong places :(  ARGH!  Why can't our bodies just behave!  I will tell you that if I lose a little number again next week, I am going back to eating my aPPA.  That was hard this week to not eat them :(  ...I must have miss-tracked something.  I must have REALLY miss-tracked something!  sorry for all of the Whine with lunch, I feel better now ;D

I haven't been on the scale for a week.....

I am REALLY freaking out!!  I haven't been on the scale for a week and that hasn't happened in FOREVER!!!  It is kinda freaking me out a bit.  I am going to weigh in, in the morning....   I haven't EVER walked into a weigh in with out knowing almost exactly what I weigh.... EVER!!  YIKES!!! ;)
