Easy Nachos
15 Baked Tostitos Tortilla Scoops- 3 PPV
1/2 c. Great Value Fat Free Refried Beans- 2 PPV
1 (3.5 oz) container Ricos Salsa de Queso Nacho Cheese Sauce- 4 PPV
(Note- approx 3 oz. Kraft Velveeta (2% milk) cheese sauce had similar points values if you can't find the other)
2 Tbsp. Fat free sour cream- 0 PPV
Green onions, sliced
Tomatoes, diced

Fill each scoop with evenly divided amounts of refried beans, cheese sauce, and sour cream. Microwave until warmed through (approx. 30 seconds). Top with onions and tomatoes.
Total= 9 PointsPlus

 

 

 

Creamy Chicken and Stuffing Crock pot Casserole

 1 pkg (6 oz) chicken flavored stuffing mix 2 zucchini, cut into ½" pieces

3 boneless, skinless chicken breasts (5-6 oz each) 1 green bell pepper, chopped

cut into cubes 1 onion, chopped

8 oz mushrooms, sliced 1 can (10.75 oz) cream of chicken soup

COMBINE stuffing mix (and seasoning packet, if included) with ½ cup water until just moistened in large bowl.

MIX chicken, mushrooms, zucchini, bell pepper, and onion in another large bowl. Stir in soup. Transfer half f of the

chicken-vegetable mixture to 4-quart or larger slow cooker. Spoon half of the reserved stuffing on top. Repeat layers.

COVER. Cook on low 5 to 6 hrs or on high 2 ½ to 3 hrs, or until vegetables are tender. 6 servings - 6 PPV each.

 

 

Slow Cooker Split Pea Soup

Equal parts chopped celery, carrots and onion, about ½ c. each.

1 bag split peas, rinsed and picked

3 slices Canadian bacon, chopped

2 bay leaves

6 cups ff chicken broth

Salt and Pepper to taste

Mix together in slow cooker. Cook on high for about 4 hours. Yield 8 servings, approximately 1 cup per serving. 4 PPV per Serving.
