It's a LIE!!!

I ate a TON of those Costco Truffles :p and about 5 pieces of that Apple Cake.  I just don't deal with CRAP in my house well.  I am going to make a sign to put on the door, "NO MORE CHOCOLATE!!!  Only Starbursts, Mike & Ikes, Twix, & Skittles!"  I won't eat any of those!

Packing Your Plan to Go!

I have to say, I am really missing some of y'all in the meetings lately :(  I know the summer is busy, but 45 minutes is worth it :)  YOU ARE WORTH IT!!!  Speaking of the meetings.....
The meeting this week CAN'T BE MISSED!!!  Planning on a vacation this summer?  Planning to stay on plan during that vacation?  OF COURSE YOU ARE!!  But- you need to get pumped- you need to lay out your plan- you need to have a WINNING OUTCOME!  That work can be done IN A MEETING!!  Sure- maybe you are just looking at making sure you are active during your vacation, or paying attention to your Good Health Guidelines.  Something needs to be planned in order to walk away from that vacation feeling successful and empowered!  Anything is possible with Weight Watchers!  Vacation success is definitely possible!!  Get into a Meeting!!
Below is the dessert that I made for dinner tonight.  It was good.  I used up a ton of little Rome apples that nobody liked around here.  I bet peaches or plums would work as well.  I'll try the plums later this week :)  I doubled it and it worked out fine.  I also just piled all of the apples in the bottom of the pan and spooned the batter evenly over the top.

I should have only had one serving of the chips at Rubio's.  I am using EVERY ounce of control I have to not eat the WHOLE bag of chocolate sitting under my hubbies side of the bed.  I should have skipped the chocolate Riesen's.

I STINK....let me count the ways....

So, the day was just great up until lunch...well, after lunch.  My sweet SIL sent my dearly down trodden hubby a whole package of assorted chocolate bars from Trader Joe's in California.  Let's just say I ate them.  Oh the shame.  For dinner I was good... actually perfect.  Then came the cookies.  I ate two cookies worth of cookie dough, two cookies and a few huge handfuls of fizzie Skittles (Those ROCK! ).  To defend my cookie dough eat, the Youth in my church made and sold cookie dough.  The sugar cookie dough was made with too little flour so they ran all over the pans and made huge messes.  We learned this the hard way.  Well, the remaining frozen little balls were just sitting there all forlorn, so I ate two.   I did get in my run :)  I did not eat the apple and I had one more slice of cheese than planned.  Oh, I ate David's sandwich too.  I am just SO stinking stressed that there is food in my mouth before I even know what's going on.  Oh and to top this all off, when I left for work, I found that some vandals had broken out the passenger side window.  DARN THEM ALL TO HECK!!!  Today I am doing the simply filling technique.  If I can't control HOW MUCH I am eating, at least I can maybe eat too much of the Filling Foods.  I hope the chocolate is gone!  I know the Skittles are ;)

The Art of Estimating :)

Happy Father's Day :)  I hope that everyone is enjoying this amazing weekend.  Could you ask for more perfect weather???  We even had Father's Day breakfast outside.  My sweet hubby got to eat in a lounge chair :)
The meeting topic this week gets us BACK TO BASICS.  So- my question is this- when was the last time YOU measured out or at least accurately estimated the amount of food you were about to eat?  Seriously?  GET INTO A MEETING THIS WEEK so you can remember why PORTION CONTROL makes a difference!!  What exactly ARE we getting from NOT measuring/at least estimating that morning cereal?  That Pasta for dinner?  Those sunflower seeds on our salad?  I'll tell you what we're getting….we're getting frustrated because we can't achieve or maintain our weight-goal!  Meetings make a difference….a perfectly portioned- controlled difference!!!!  Get into one!!
I can't wait to see y'all!

"The line between failure and success is so fine that we….are often on the line and do not know it.  How many a man has thrown up his hands at a time when a little more effort, a little more patience, would have achieved success."

DROP dead Recipes!!! PPV Updated!

I went to a church meeting last night and these two salad recipes were made for us.  They were FANTASTIC!!!  The yogurt dip was given at my Monday morning meeting in Provo.  It was so tasty!!!  I know what I am making for Father's Day!!!

Thai Beef Salad
Marinade-
3/4 t Thai fish sauce
1/2 t crushed black pepper corns
1 1/2 t sweet chili sauce
Dressing-
1/2 C fresh lime juice
2 T brown sugar
2 T fish sauce
1 T Sweet Chili sauce
2 cloves garlic, minced
1 T light soy sauce
1/4 C canola oil
Salad-
1 lbs flank steak, trimmed
1 1/2 C red onion, sliced
1 C grape or cherry tomatoes, sliced in half
6 C romaine lettuce
1 1/4 C English cucumber, sliced
1 red chili pepper, seeded and julienned
1/4 C fresh cilantro, chopped
2 T fresh mint, chopped
Directions- Combine marinade and put over steak.  Marinate in refrigerator for 30 minutes.  Grill or broil marinated steak to desired doneness.  Let stand for 5 minutes.  Slice steak.  Combine dressing ingredients.  Stir until the sugar is dissolved.  Combine salad ingredients in a large bowl.  Toss with dressing.  Top with steak, cilantro and mint.  There are 35 points for the whole thing :)  If you have 12 servings, each serving has a PointsPlus value of 3.

Sweet Potato Salad
2 1/2 pounds yams, peeled and diced
2 t olive oil
1/4 C pecans, chopped and toasted
1/2 C dried cranberries
1/2 C green onions, chopped
Dressing-
1 T canned chipotle in adobo
3 T olive oil
1 T shallots or red onion, minced
2 T fresh lime juice
2 T red wine vinegar
2 t honey
2 cloves garlic, minced
salt and pepper to taste
Toss the yams with the 2 t olive oil and place on a sprayed baking sheet.  Bake at 350 degrees until tender, about 20 minutes.  Remove and let cool.  While these are cooling, place the dressing ingredients, except the canola oil, into a blender or food processor.  Blend.  While blending, add the canola oil in slowly.  When the potatoes are cool, toss with remaining ingredients.  Pour the dressing over the top.  This had 47 points for the whole thing.  If you make 12 servings, there are 5 PointsPlus Value in each serving.

Yogurt Peanut Butter Dip
1 C Vanilla Light -n- Fit yogurt or plain yogurt
1 T peanut butter
Mix together. 4 Servings (abt 1/4 C each) at 1 PointsPlus Value each.  This is a GREAT on apples. It's a YUMMY way to get that nutty flavor without all the calories.  Remember that 1 teaspoon of peanut butter has 1 Point all by its self.  A 1/4 cup goes a TON further ;)

SHE TRACKS!!!

Yes, my dinner was a weird as it looks.  I actually ate the peppers, cucumber and tomato for an afternoon snack while I watched the new Ice Castles.  It was very good.  The rest, minus the cookie, jello, pineapple and strawberries, were a salad I ate while we watched The Blind Side.  I ate the jello and fruit right before I cleaned out our rain gutters.  Now that was SICK!!!  I gagged and had to get off the roof at my first attempt.  I then got used to it and got it all done in record time.

Yummy Cookies from Sue!!! PPV Updated

Wellness Cookies
Enjoy the cookies from the Fun Walks at home.
6 T. margarine
1/2 c. granulated sugar
1 c. brown sugar, firmly packed
2 egg whites
1/4 c. molasses
1 c. whole wheat flour
1 c. all-purpose flour
1/2 tsp. salt
2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. cloves

In a large bowl or electric mixer, beat margarine, brown sugar, egg whites, and molasses (the mixture will look curdled). Sift or stir together all of the dry ingredients. Add to molasses mixture and mix until blended. Cover and chill dough (this is important - dough will be too sticky to handle if not well chilled). Form into ball (about 1 1/2 teaspoons dough). Roll in sugar to coat. Pre-heat oven to 375 degrees. Bake on an ungreased baking sheet for 8 to 10 minutes. Do not over bake, or they will lose their chewy texture. Store in an airtight container.

Tricks for Tracking

If I have said it once, I have said it a MILLION times, the magic of weight loss is in the tracking.  This weeks meeting is all about fine tuning our tracking skills.  You don't want to miss this baby!
Also, don't forget to bring all the knowledge that you learned this week about how to keep hunger at bay.  I can't wait to hear all of your great epiphanies!
OK- so this is REALLY short and sweet, but my sweet hubby is resting and I am in need of a nap too.  His surgery went well and now we can focus on the healing.  Thank you so much for your love, concern and prayers.  We have felt them and really appreciate it!
I'll see you all this week in the meetings.

Taking Charge of HUNGRY!!

Hey!  I just got off of the phone with AnnaLisa and she told me that the Walk-It Challenge was a total HIT!  I hear that there were a million of you ready to walk and roll!  I am SO glad to hear it!  It sounds like we learned a TON and are making notes to make sure that next years event is even better!  WAY TO GO!!  I am so proud of y'all!  I am so sad to have missed this big event, but as some of you have heard, my sweet husband was practicing his Superman tricks and took a bad spill off of our roof.  (I'm just kidding about the Superman tricks, the ladder decided it would rather not do it's job).  He suffered some serious injuries to one of his legs and will be laid up for quite a while.  Thank you for your concern and prayers.  They are much appreciated :)
Now for this weeks GREAT meeting.  Do any of you just really wonder how ever to deal with that terrible monster HUNGRY???  You just cannot miss this meeting.  We have great ideas and tips for winning the never ending battle with our appetites!
I can't wait to see you all this week!

No Monday Meetings :(

I hope that you are all enjoying this WONDERFUL Memorial Day weekend.  What GREAT weather we are having!!!  Now, just in case any of you have forgotten, there are no meetings for Monday, May 31st.  Please get into another meeting this week.  YOU ARE SO NOT GOING TO WANT TO MISS THIS ONE!!!
You see….when we are checking out at the store and look at the magazine racks, we see MILLIONS of magazines (okay...maybe not millions) that promote amazing weight-loss with quick gimmicks and tricks.  But really?  I mean REALLY!?  THERE ARE NO TRICKS OR GIMMICKS THAT CAN MAKE WEIGHT LOSS THAT LASTS POSSIBLE!!!  This week's meeting reminds us- focuses on- and gets us into the BRILLIANCE that is WEIGHT WATCHERS!!  WE KNOW WHAT WE'RE DOING AND WE BRING THE RESULTS!!  LIFETIME RESULTS!!  Don't EVER be fooled.  Don't EVER buy in to the gimmicks…the thinking that "you can't eat after 7:00 PM" or " you have no control over your metabolism."  It's energy in vs. energy out.  GET INTO A MEETING so that you can stop the craziness, trust in Weight Watchers, and WATCH YOURSELF CHANGE!!

LULLABY MUFFINS
Points Value: 2

Serves: 12

Serving size: 1 muffin

2 cups whole wheat pastry flour

1/2 teaspoon salt

1 tablespoon baking powder

2 large bananas

1/3 cup applesauce

1/4 cup honey

1/2 cup milk

Preheat oven to 350 degrees.

In a large bowl, combine the flour, salt, and baking powder.

In a blender, puree the bananas; add the applesauce, honey, and milk.  Blend well.

Pour the banana mixture into the dry ingredients and stir until just moistened

Line muffin tins with paper muffin cups, pour in batter, and bake 30 minutes or until tops are lightly brown and slightly springy.

NOTE:  Make sure you use whole-wheat PASTRY flour or you'll produce golf balls, NOT MUFFINS!  I also used unsweetened applesauce and fat-free milk.  These are a dense muffin.

Pork Fajita Wraps

Lime juice, cumin, onion and bell pepper wrap up a bundle of great flavor in these no-fuss "fajita-wiches".

Prep Time: 10 min

Total Time: 36 min

Makes: 4 servings

1/4 cup lime juice

1 1/2 teaspoons ground cumin

3/4 teaspoon salt

4 garlic cloves, finely chopped

1/2 pound pork tenderloin, cut into 2x1/2-inch strips

1 large onion, thinly sliced

3 medium bell peppers, thinly sliced

4 cilantro-flavored flour tortillas, (8 inches in diameter)

1. Mix lime juice, cumin, salt and garlic in shallow glass or plastic dish. Stir in pork. Cover and refrigerate, stirring occasionally, at least 15 minutes but no longer than 24 hours.

2. Remove pork from marinade; reserve marinade. Spray 10-inch skillet with cooking spray; heat over medium-high heat. Cook pork in skillet 3 minutes, stirring once. Stir in onion, bell peppers and marinade. Cook 5 to 8 minutes, stirring occasionally, until onion and peppers are crisp-tender.

3. Place one-fourth of the pork mixture on center of each tortilla. Fold one end of tortilla up about 1 inch over pork mixture; fold right and left sides over folded end, overlapping. Fold remaining end down.

Serve these fast fajitas with a mixture of chopped tomato, chopped fresh cilantro, salsa and sour cream or yogurt.

Substitution Ideas:

¨       You can use 1/2 pound boneless chicken breasts or beef boneless sirloin steak instead of the pork.

¨       Regular tortillas make a great stand-in for flavored varieties.

¨       You can use 1/2 pound boneless skinless chicken breasts or beef boneless sirloin steak instead of the pork.

Melon-Cucumber Salad

Try these fruits of summer dressed with a sweet-and-sour dressing.

Prep Time: 5 min

Total Time: 1 hour 5 min

Makes: 6 servings

1/4 cup vegetable oil  If you substitute canola or safflower oil—one serving of this salad will meet your Good Health Guideline of 2 teaspoons of heart-healthy oil for the day!  NOTE:  This ¼ cup of oil = 12 teaspoons—divided by 6 servings, = 2 teaspoons each serving.  Just RIGHT for a healthy Weight Watcher!

2 tablespoons lemon juice

1/2 teaspoon sugar

1/4 teaspoon salt

1/8 teaspoon freshly ground pepper

3 cups 3/4-inch pieces melon, (honeydew, cantaloupe, watermelon)

Assorted salad greens

2 small cucumbers, thinly sliced

1. Shake oil, lemon juice, sugar, salt and pepper in tightly covered container; toss with melon and cucumbers.

2. Cover and refrigerate at least 1 hour but no longer than 8 hours. Drain salad. Serve on salad greens.

Tips:

Fresh lemon juice brings the best flavor to this tangy dressing. You'll need 1 or 2 lemons—depending on their size—to get the 2 tablespoons needed here.

Time Saver:

You'll save plenty of time buy purchasing precut melon from the produce section.

Nutritional Virtuosity ;)

So, this is what my perfect day looks like? :)  I guess it's not perfect in that I had FOUR of those Cookies & Cream bars.  I put them on different meals as to not mess with my perfect point day.  I even went running instead of going to Macey's for an ice cream cone.  Here's hoping that today can be just as good.  Tomorrow we are going to be super nuts with my daughters graduation.  I have got a safe meal planned for the BBQ at my house afterwords.

Weight Watchers Electronic Food Scales

Just a quick note, the Weight Watchers Electronic Food Scale is going to be discontinued until the end of the year.  The Provo center has a few, a VERY few.  If you were wanting one, you have a bit of a chance right now.  I cannot get any for Payson until next year.  If you still would like one and are in Provo this week, it might be worth a short to stop by and see if they still have any.  There were some this morning.  You will need your Pocket Guide to show that you are a current member.  Good luck and good night ;)

Activity, activity, activity!!!  THIS WEEK's MEETING IS ABOUT FINDING OUT WHAT YOU REALLY WANT!!?  It's just not enough to keep moving for the sake of moving.  What we generally find is that it doesn't provide us enough incentive to keep going!!!  WE HAVE TO HAVE A GOAL!!  We have to KNOW WHAT WE WANT!  Get into a meeting.  Find out…without a doubt….what it is YOU are looking for as it pertains to YOUR ACTIVITY!!!

I can't wait to see you!! :)

Sunday, Sunday!!! ;)

I am very pleased with my day so far :)  I planned it all out, and then instead of my usual morning prayer to stick to my points, I prayed that I'd stick to my PLAN ;)  Ah ha!  That is the secret.  I have a good plan, I just don't stick to it.  So, that is my new strategy.  RELAX and stick to my good plan and pray like crazy to do just that!  It's only food.  I am not going to starve or go hungry.  I was even able to stick to my plan with the unexpected ambush from the girls at church and their DELICIOUS cookie samples for their fundraiser.  I had two points unaccounted for and then the avocados that I had planned for dinner were not ripe!  VOILA!  I had 4 points to cover the cookie samples I ate.  I figured it was about one cookie worth of tastes.  They were GOOD!  Boy, did I want more.  Why is just a tiny bit never good enough?  Man, am I lame!
We are off to my daughters Seminary graduation.... THEN THE LOST FINALE!
