Merry Christmas!!!

MERRY CHRISTMAS!!  
I hope y'all are VERY excited about this coming week!  I hope you are finding out the PPV's(PointsPlus Values) for all of your favorite Holiday treats!  Knowing the PPV's of the things that are all around you will help you to make the best choice for you!  Come in this week and lets get ready for all of the wonderful parties coming up.

Spinach, mushroom and feta omelet

 1/2 cup egg beaters - 2 PPV          or   1/2 cup egg whites -  PPV 0

1 cup spinach - 0 PPV

1/2 cup fresh mushrooms - 0 PPV

1 tsp olive oil - 1 PPV

1 TBSP feta cheese  -  1 PPV

Saute spinach and mushrooms in oil, add egg beaters, then feta cheese.  Serve with 1/2 grapefruit and 1 cup of FF milk - 2 PPV/ or a piece of toast (PPV will vary here)

 6 PPV total or 4 PPV if you use just egg whites....wow....a lot of food wouldn't you say.

 

Broccoli and Cheese Mini Egg Omelets

 These are great for making ahead of time and grabbing on the run.....delish.....use you imagination and switch it up with different veggies

 4 cups broccoli florets

4 whole eggs

1 cup egg white (egg beaters)

1/4 cup reduced fat cheddar

1/4 cup grated romano cheese

TBSP olive oil

salt and pepper

cooking spray

 Preheat oven to 350.  Steam broccoli with a little water for about 6-7 min.  When broccoli is cooked, mash into smaller pieces and add olive oil, salt and pepper and mix well.

 Spray cupcake tin and spoon broccoli mixture evenly into 9 tins.

 In med bowl, beat egg whites, eggs then add the grated romano cheese.  Pour into greased tins over broccoli until a little more than 3/4 full.  Top with grated cheddar and bake for about 20 min.

 9 servings    2 PPV per serving
