Oh, Such GREAT Recipes!!! :)

VERY good day :) These two recipes were FANTASTIC!! I am super happy with them :) Let me know what you think :)

Zucchini Potato Tomato Scramble

5 medium cooked red potato(es)
14 item(s) egg, beaten well
1 large Anaheim pepper, chopped
1 cup(s) frozen corn kernels
1 large zucchini, sliced
3 large tomato(es), diced
Wash, quarter and cook potatoes in just a bit of water, covered, until tender. In a large skillet, spray pam. Saute zucchini, pepper, corn, & tomatoes. Add potatoes when they are cooked, I cut them up a bit more. Salt to taste. Mix eggs in a separate bowl. Pour over veggies. Stir. Cover and let cook for about 15 minutes on medium heat. Stir a few times. These are pretty generous servings ;) I still wanted more :)


Peach Cobbler
POINTS® Value: 3
Servings: 12


7 large peach(es)

1 cup(s) all-purpose flour

1 1/2 cup(s) sugar

3/4 cup(s) 1% low-fat milk

2 tsp baking powder

1/8 tsp table salt
Spray a large 9x13 pan with Pam. Peel and slice peaches, set aside. Mix all other ingredients together and pour into baking dish. Sprinkle peaches over the top. Bake at 350 for one hour. If you have 8 large servings, it is 5 POINTs per serving.
****If you use 3/4 C splenda, 3/4 C sugar, the points are 2 POINTS for 12 servings, and 3 POINTS per serving if there are 8 servings :D
