Some APPA bite the dust...

It would have been a perfect day but I forgot that our friends were coming over for a hot dog roast in our back yard for dinner tonight.  I highlighted the things that I should not have eaten today in red.  I am bummed, but I'll move on.  It's a good thing I still have a truck load of Activity PPA...for now ;)  If I had remembered that they were coming, I would have made a few different choices.  I'm tired

Beef, Potato and Quinoa Soup

Servings: 4 • Size: 1-1/2 cups • PointsPlus: 8 pts
Calories: 307.9 • Fat: 13.8 g • Protein: 15.7 g • Carb: 31.3 g • Fiber: 4.6 g 
 

  • 2 tsp olive oil
  • 6-7 scallions, chopped
  • 2 cloves garlic, minced
  • 1 tomato, diced
  • 1 tsp cumin
  • 1/2 tsp Badia Sazon with Annato
  • 1/2 lb beef, cubed into small bite size pieces (I used beef tenderloin)
  • 5 cups water
  • beef bullion
  • 1 carrot, peeled and sliced
  • 2 tbsp yellow bell pepper, diced
  • 2 medium potatoes, peeled and cubed
  • 1 cup cooked quinoa
  • 6 tbsp fresh chopped cilantro
  • salt and pepper to taste


Saute oil in a large pot, add scallions and garlic and sauté until soft over medium heat, about 3 minutes. Add tomato, cumin, sazon with achiote, 1/4 cup cilantro and cook another 2 minutes. Add beef, water, bullion, carrot, bell pepper, salt and bring to a boil. Cover andsimmer on low about 1-1/2 hours, until meat is tender.

Add potato and cooked quinoa and cook an additional 25 minutes. Add remaining chopped cilantro and serve

WPPA is my favorite thing!

I had my weigh in yesterday.... DOWN!!!  4.2# :)  Now, so you don't get TOO excited, I have been WAY up, so I am officially down 5.2# since my HORRIFIC weigh in the day after Christmas.  Life is such a yo-yo but I think I am getting a handle on it.  I am going to do my darnedest to be on plan everyday for the rest of the week.  Let's start praying for me now :)  I am pretty excited about the Chinese food for dinner.  It was tasty.  The cake was for a "Welcome Home" party for my dad.  He is finally home after his stroke 2 weeks ago.  He is doing VERY well.  We are so blessed!

WEIRD eating day...

Busy crazy weird eating day.  I need to go grocery shopping for some normal food :)  My weigh in is tomorrow.  I am a bit nervous.  I ended up eating all of my activity PPV's so we'll just have to see how it goes.  I am pretty sure I will be down.  Funny, I earned 49 activity PPV's this week.  Interesting number ;)  I have 54 planned for next week.  Here's hoping I can get them all in, physically I mean.

Cooking Class takes the APPA!

We started a cooking class at my church.  It was "Tastes of the Americas" tonight.   Our Spanish speaking ladies taught the class.  It was AWESOME!!!  I am SO happy with the way it turned out.  I marked the things I ate at the cooking class.  My activity PPV's are eaten :(  It should be ok.  I gave blood today for the first time :)  I'm going to bed...

Over by 5,,,

What could I do?  I walk in from work to find my husband up to his elbows in gnocchi dough.  It's 7:45 and the kids are just eating.  I was planning on eating a smoothie and being right on plan, but the "chef" would have had his spirit crushed by me snubbing his gourmet experiment.  He did a great job with his first gnocchi attempt.  The kitchen will never be the same ;D
